Development of value-added products and the preparation of a technical manual for the products developed

Whith the frameork of the former FAO-CFC-INFOSAMAK Project, an external consultant together with INFOSAMAK staff visited all the participating companies and identified with more accuracy the value-added Products to be developed in these companies.

This activity was carried out from December 2003 to March 2004. Products were developed by the consultant and samples were displayed at the Cairo Buyer Seller Meeting in April 2004. At the end of this consultancy work, a technical manual on manufacturing, processing and presentation of value-added products was published. It includes 10 product profiles; each one contains a brief description of the product, a simplified production diagram as well as a list of the equipment required for the manufacturing of these products, in particular freezing and packaging equipment.

It should be underlined that ready-to-eat meals identified by a Moroccan private company were developed within the framework of joint venture with a French Company. The contacts were initiated during the Workshop on Quality held in Tunisia.
